LESSON PLAN
1 Cook the pasta in salted boiling water until a little less than al dente. Drain, rinse with cold water, and drain the pasta again.
2 Line a plate with paper towels and have nearby. Heat the olive oil in a sauté pan over medium heat, and cook the potato slices until lightly golden, about 6 minutes. Transfer the slices to the towel-lined plate to drain.
3 Combine the butter, smoked paprika, garlic, lemon juice, and 1 teaspoon of the salt in a small bowl. Mash together into a thick paste.
4 Add the sauce, paprika paste, and cheese to a large, heavy-bottomed pot and cook over medium heat. Stir until the cheese is barely melted, about 3 minutes. Slowly add the cooked pasta, stir, and continue cooking while stirring continuously until the dish is nice and hot, another 5 minutes.
5 Spoon into bowls and arrange the potato slices in a single layer on top of each portion. Serve right away.
